Tasty Chinese Cong You Bing
Super crispy and flaky on the outside and slightly chewy inside, my dim sum favorite, scallion pancakes, make a wonderful snack that you’ll love!
- 4 cups of flour
- 1 cup of boiling water
- ¼ cup of cold water
- 1 teaspoon of salt
- 8 oz. chive
- 1 tbsp sesame oil
- Vegetable oil
Finely chop the chives. Toss with sesame oil and ½ teaspoon of salt and refrigerate.
Combine the flour and ½ teaspoon of salt. Add the boiling water at the same time and mix vigorously.
Then gradually add cold water and knead until you obtain a smooth, homogeneous and smooth dough. Let stand 45 minutes...
Divide the dough into 10 pieces. Gently roll each piece of dough until it is about ⅛ inches thick.
Brush each piece of dough with oil. Sprinkle generously with fresh onions.
Roll each piece of dough to form a long stick and twist each stick to form a snail shape. Leave to rest for 30 minutes.
Roll each snail into circles ¼ inch thick.
Heat a lightly oiled pan over medium heat and cook each pancake for 3 to 4 minutes per side.
