Are you looking for a side dish that is both good and economical? This recipe for onion potato pancake is the perfect accompaniment for potato lovers. Composed of grated potatoes (and onions as desired), these small golden patties are an excellent alternative to traditional fries or sautéed potatoes. Crispy on the outside and tender on the inside, they are a real treat!
Easy Crispy Onion Potato Pancakes !
- 1 kg of potatoes
- 2 onions
- 3 eggs
- 3 tablespoon flour
- 1 tablespoon oil soup
- ½ bunch of parsley
- Peel the potatoes and grate them in a bowl. Peel the onions and chop them. Place them in a salad bowl with the grated potatoes. Add the eggs, the flour (to give a little consistency), the parsley, washed and chopped, salt and pepper. Mix everything well.
- Form small patties: using a tablespoon place small heaps of your preparation and flatten them to form patties before cooking them. Heat the oil in a large skillet and then place the onion potato pancakes there. Brown them on low heat for about 8 to 10 min on each side.
- Turn the patties from time to time until they are nicely colored on both sides. They must be "tanned" on the outside but very soft on the inside. Repeat until the preparation is used up. Place the potato pancakes with onions on a plate covered with absorbent paper to remove excess oil and add a pinch of salt.
- Serve the potato pancakes with the hot onions.
